Chicken or tofu honey glazed sweet potatoes

      I said this was a vegetarian/vegan blog. However, today I want to share my family's favorite recipe which contains chicken. The good news is you can still make it using tofu instead of chicken.
what you will need :

• a roasting pan
• 2 to 3 sweet potatoes
• 3 tbs of olive oil
• 2 cloves garlic
•3 tbs honey
• 3 tsp apple cider vinegar
•2 tsp salt or to taste
• 2 tsp cumin
• 1 tbs teriyaki sauce
• 1 tsp cayenne pepper
• 6 boneless, chicken breasts about 2 pounds (use extra firm tofu for vegan recipe)
• cilantro for garnish

Directions:

• Preheat oven to 400°F
• rinse, peel and dice the sweet potatoes in small cubes
• toss the potatoes in olive oil and place on bottom of pan
• In a bowl, mix the garlic, honey, vinegar, salt, cumin, pepper, sauce. Toss the chicken breasts or tofu in the marinade
• place the chicken or tofu on top of potatoes. Bake until chicken or tofu is cooked through, for 30 minutes.
• remove from oven and garnish with the cilantro. Bonne appetite !

Tips :
• for extra flavor filled tofu and chicken, marinate for at least 3 hours before you start preparing the recipe. Just place the tofu or chicken in the bowl, cover and place in the refrigerator
• you can add your favorite spices to the mixture
• The sweet potatoes need to be cut in small pieces in order to cook faster
