The ultimate vegetable fried rice😋
Rice is one of the most eaten dishes around the world. Although each area or I should say each continent has its unique recipe, they all have some things in common and that is it always contain rice(dah!!), different types of vegetables and sometimes meat.
I am going to share how I make easy fried rice with no meat and only takes around 15-30 minutes to prepare!
P.S. Feel free to add, remove or replace any kind of vegetable you want. You can also add less or more according to your taste.

What you will need:
- 2 cups of slightly cooked rice
- 1/2 chopped red onion
- 1/2 red,green pepper
- 1/2 white onion
- 2 celery sticks
- 2 to 3 diced carrots
- 4 cloves of garlic
- 1/2 clove of ginger
- 2 tablespoons of sesame oil (optional)
- 4 tablespoons of olive oil (any cooking oil of choice)
- 1 cup of cooked peas
- 5 tablespoons of reduced sodium Tamari sauce or soy sauce
- pepper,cloves, and other spices to taste NO SALT!
- you can completely cook the rice and put it in the refrigerator.
- soy sauce is high in sodium consider mixing the sauce with one tablespoon of honey
- or cooking the rice with no salt
- Tamari sauce is gluten free and can be bought in major grocery store in the "Asian or International food aisle"
Preparation:
- Heat a large skillet pan / casserole on medium heat. Add the olive oil let sit for a little while then add the garlic and ginger. cook for 1 minute
- Add the carrots, when slightly tender add the celery. cook until tender but still a little firm
- add the rest vegetables except the peas. let cook for 5 minutes stirring occasionally
- add the cooked peas,stir and add the sesame oil, Tamari sauce and spices. Let cook for 1 to 2 minute
- Add the rice, start by adding 1 cup mix with all the ingredients then add the rest.
- Keep stirring! frequently so it doesn't stick to the pan.
- Add more Tamari sauce until desired color and taste. And you are done!!
